Walnut brownies with nut brittle

Walnut brownie cupcakes!

These little babies will be off tomorrow to my old office together with some wedding invitations and someone’s missing plane ticket. Heh.

Anyway, the nut brittle is a first for me. I’ve never been great at making brittle and this time was no exception. I did everything off – too much water, too quick on adding the nuts, too fast off the stove. To top things off, I used rock sugar, caster sugar and added about two teaspoon of marmalade jam. The result is unique but somewhat strange; the recipe needs some fine-tuning.

Needless to say, I’m now left with heaps of sugared nuts (walnut, hazelnut and pecans). I suppose I could always ground them and then sprinkle them over some not-so-sweet cookies…o’well, we’ll see how it goes…

Now I’m just hoping that this will go down well with the folks tomorrow!
